Mac & Cheese has never been easier than with Studio Voodoos French Onion & Chives Cashew Cheese
Reminiscent of the 70’s this cheese totally captures the flavours of the popular dip of the era!
We loved this cheese so much we wanted to make it the hero of a meal. Like most kids mine are crazy about Mac & "Cheese" and with our small van kitchen anything simple is a win with me so the decision was made!
Normally when I make our Mac & Cheese I use soaked cashews for the creamy base and blend them till super smooth but by subbing it out for the cheese I was able to make it in one pot - with no blender required. Perfect as we are off grid so often!
To pimp it up a bit I added a few extras, recipe below, but honestly just cook pasta, stir in the cheese and you can't go wrong!

Can't get hold of Studio Voodoo cheeses in your state? Try Sprout & Kernel Chive Cheese or a Blue Mountain Creamery variety as they would both work perfectly!
Easy Peazy Mac & Cheezy
Serves: 3 Very Hungry Children + 1 Adult
The Ingredients
500 grams of Dried Pasta
1 Block of Studio Voodoo French Onion & Chive Cream Cheese (or substitute)
1 Medium Brown Onion Dived Finely
1 Spring Onion Finely Sliced
1 to 2 Tablespoon of Nutritional Yeast
1 Teaspoon of Smoked Paprika
1 Teaspoon of Garlic Powder
1 Teaspoon of Onion Powder
1 Cup of Plant Based Milk (I used Soy but just make sure its unsweetened and unflavoured)
Some fresh chives to garnish - so not neccessary but it makes it pretty!
The Method – Could it get any simpler?
Finely diced a brown onion and caramelise it in the pan with a tiny bit of oil, till its sweet and sticky, before putting it to one side and cooking the pasta.
Once the pasta is cooked al dente allow to drain in a colander while you prepare the sauce.
Chop the cheese into rough pieces and add it in, together with the carmelised onion and half of the plant milk.
Stir until the cheese is melted then add in the paprika, onion & garlic powder.
Drizzle in the rest of the milk slowly making sure it retains a glossy thick consistency.
Plate up the pasta and pur the sauce over the top.
Garnish with some greens and a sprinkle of paprika for colour!
Tips
I like to keep a couple of tablespoons of the pasta water for the sauce to thin it out if necessary.
To make it really simple (but not as pretty!) keep the pasta in the pan as you add in the other ingredients and just keep stirring to make sure its all covered. I do this most of the time as its so much easier!

You can add anything you want to this dish but make sure to let the cheese shine through!
